Chocolate Mousse Raspberry Parfait:

NOTE: This recipe, like all chocolate mousse recipes, uses raw eggs. If raw eggs may cause digestive problems, this recipe is not for you.

Apologies: No photo is available. The recipe was not made as some of the ingredients went bad prior to starting out. The recipe is provided as was intended.


1) Dark baker's chocolate - 4 Oz. bar
2) Eggs - 2 to 3
3) Butter - 1 tblspn.
4) Heavy whipping cream - 1/2 cup
5) Powdered sugar - 1/8 cup
6) Vanilla yogurt - 1/8 cup
7) Raspberries - 1/4 cup
8) Whipped topping - as desired


1) Separate egg whites and yolks.
2) Melt the chocolate in a double boiler.
3) Add powdered sugar to egg whites and whip.

NOTE: Whip the sugared egg whites to peaks.

4) In a separate bowl, whip the heavy whipping cream.
5) Stir the egg yolks into the whipped heavy cream.
6) Stir in the melted chocolate with the yolks and heavy cream.
7) Fold in the whipped egg whites.

NOTE: Do not beat the egg whites into the mixture, just fold them in.

8) Place the raspberries at the bottom of a dessert cup.
9) Cover with yogurt.
10) Pour the chocolate mousse into the serving cup.
11) Optionally, top with whipped topping.
12) Optionally, sprinkle on shredded chocolate.
13) Serve.
