I love a good summer drink, and this is no exception. Mint is extremely easy to grow (and even a little invasive, so keep it in a pot), and you can even buy a specific variety of “mojito” mint for this cocktail. It’s not necessary, though; regular ol’ mint will be just as delicious.
Ingredients for each drink:
10-12 fresh mint leaves
1 tsp sugar
Juice of 1/2 lime
2 oz white rum
Splash of club soda (optional, you can omit this if you don’t have any on hand).
Method:
Put your mint leaves in a cocktail shaker, add the sugar, and muddle together. If you don’t have a muddler, you can use a sturdy fork. You want to bruise and crush the mint a bit so it releases its oils.
Add the lime juice, and stir until the sugar is dissolved. Add the rum and stir again.
At this point, you can shake over ice and serve. However, I like to toss the whole shaker in the freezer at this point and wait an hour or so. This will guarantee it will be good and cold at serving time (the alcohol content is high enough that it won’t freeze).
Pour into a glass, top up with some club soda if you want, and serve.
