I love this stuff! I've bought it for years and then all of a sudden, it was gone.
How hard could it be to put this together?


Copycat Bird's Eye® / C&W® Brand The Ultimate Southwest Blend Frozen Vegetables

yield +/- 7 Cups

Ingredients:

10 oz. frozen Corn Kernels (no need to de-frost)
15 oz. can Black Beans, rinsed & well drained
1 C. Poblano Chile, small dice
1 C. Sweet White Onion, small dice
1 C. Sweet Red Bell Pepper, small dice

Method:

Grill the Poblano Chile and Onion until charred on the exterior
Place the Chile in a paper bag, so that the skin will separate from the flesh and make it easy with peel off
Allow both the Chile and the Onion to cool and dice
Combine everything in a large bowl
Line a 1/2 sheet pan with foil
Spread the mixture out in a single layer
Freeze overnight
Portion out in Freezer Zip-top

Well you certainly copied it well! Your photo is virtually identical! It does seem to be an interesting mix with a good balance of sweet, spicy, and earthy.

Morning Glory thank you, this blend of frozen vegetables is very nice in a number of applications.
Soups, Stews, Wraps, it's very tasty.
(edit) I never noticed before that it does look pretty much like the photo on the original package. Huh.
