Recipe Courgette/zucchini "meatballs"

These are really easy to make and can be served as a snack, with some chutney, as a side dish or, if you want to use a sauce, as a main course.

Ingredients:
2 medium courgettes
½ small onion, minced
1 hot green chile, minced
A 1" piece of fresh ginger, minced
1 tsp cumin seeds
1 tsp garam masala
½ tsp salt
30 gms (you may need more) chickpea (besan) flour
Oil for deep frying

Method:
  • Wash the courgettes, top & tail, then grate. Squeeze the grated courgettes between your palms to remove as much liquid as possible.
  • Mix all the ingredients together in a large bowl.
  • Heat the oil to 375F
  • Make ping pong-sized balls with the courgette mixture and deep fry for about 5 minutes, or until the balls have browned on the outside.

The original recipe has a sauce which is similar to the malai kofta gravy - very similar to a tikka masala/butter chicken gravy.
This particular effort made 5 kofta. I scaled it down because it's only me eating them!
