Devilled eggs

I like that she uses more egg yolks than whites too.
I do that sometimes, because I like overstuffed eggs. The ones I made yesterday…I made an extra one, and those two halves barely had any filling in them, not even leveled up, so those became the chef’s treat.

I use yoghurt instead of mayo
I’ve done that, and also sour cream, and a mix of either with mayonnaise, but my preference is all mayonnaise.
 
Has anyone tried butter rather than all mayo?
Nagi of Recipe Tin Eats is a huge fan.
She's a fairly reliable source so I'm thinking it's worth a try even though I feel dubious!

Devilled eggs

Yes, butter works, so does yoghurt or cream. Many old recipes use butter rather than mayonnaise. All you are trying to do is moisten the egg yolks so that the mixture isn't dry and crumbly. Very little butter is required. Obviously you need other flavours too with the butter. Herbs work very well. Devilled eggs implies they have a chilli factor such as curry powder or paprika, but you can stuff eggs without the heat.

Saying that I've probably eaten devilled eggs at some point, but I really can't remember it would be so long ago
It's not something I'd faff about making just for myself, so for me they would be a very niche thing to cook.

Right, rarely do I make them for just us two. Last time I made them for just us was for the big American Superbowl game (I was mainly in the kitchen making food but I like to watch the TV ads). Before that? Only made them for family gatherings and parties I do believe.

Okay now, these are totally weird--to me,anyway. though maybe I would try the Bloody Mary eggs.

Interesting little trend.
They link to a bloody mary cocktail recipe but not anything egg related, still it made me fancy a bloody mary :laugh:
In all honesty the amount of time and effort that would go into creating 6 different flavoured halves would put it on my no list but then I suppose tiktok and insta are all image driven and it's a competitive space so they would invest the time in making something worth looking at.

Two fillings is my maximum effort :happy:
