I do that sometimes, because I like overstuffed eggs. The ones I made yesterday…I made an extra one, and those two halves barely had any filling in them, not even leveled up, so those became the chef’s treat.I like that she uses more egg yolks than whites too.
I’ve done that, and also sour cream, and a mix of either with mayonnaise, but my preference is all mayonnaise.I use yoghurt instead of mayo

Right, rarely do I make them for just us two. Last time I made them for just us was for the big American Superbowl game (I was mainly in the kitchen making food but I like to watch the TV ads). Saying that I've probably eaten devilled eggs at some point, but I really can't remember it would be so long ago
It's not something I'd faff about making just for myself, so for me they would be a very niche thing to cook.
Have you tried it?Yes, butter works, so does yoghurt or cream. Many old recipes use butter rather than mayonnaise. All you are trying to do is moisten the egg yolks so that the mixture isn't dry and crumbly. Very little butter is required. Obviously you need other flavours too with the butter. Herbs work very well. Devilled eggs implies they have a chilli factor such as curry powder or paprika, but you can stuff eggs without the heat.
I'm not keen on the idea. Cold butter doesn't have a good mouthfeel and I like my deviled eggs chilled.Have you tried it?
