Your planning is admirable! I can't even plan what I'm going to eat this evening, let alone at the end of the month! :D :D
Well I do manage to plan out within a few days sometimes, but most of the time I am on a shorter window of "what do you want for dinner tonight?" and I will give Mr. OH a few options to choose from.

Easter comes early this year...it will probably be just the two of us. We aren't Catholic so we won't do any pre-Easter meals, in fact, we may not even make anything particularly special for Easter...

I was freezer diving yesterday and spotted a half ham I won pre xmas. We will be having at easter. Depends on kids plans over Easter. Hot glazed ham with bourbon glaze .

I like ham in soup or diced in an omelet, but can't stand it on it's own. It's a textural thing for me.
 
Wow I thought everybody loved ham. Although my wife hates pasta. Says it's a texture thing as well.
Spose it's like me with tripe?

Eating tripe is like eating rubber bands, to me. I don't like chewy meat, which is why I prefer filet mignon and ribeyes for steaks. Ham, when prepared with bean soup (pretty good with potato soup as well but prefer beans), is cooked until it's falling apart and it's lovely. In an omelet (needs to have about 4 other ingredients in with it) it's fine because it's got so many other ingredients with it that it just imparts a nice smoky flavor. I really love omelets with ham, onion, red bell pepper, mushrooms, asparagus (or spinach), and cheese.

I prefer my pasta softer, as does my Italian-American DH. The Italian elders and cousins all prefer al dente. We are rebels, LOL!

I also don’t like ham - I can’t quite place my finger on why, but something about the smell is off-putting to me.

I haven’t thought that far ahead to Easter meals in detail yet, but I have invited my parents, brother & SIL over to have dinner at some point over the weekend. I’ve got a prime rib roast in the freezer so I’ll haul that out and make prime rib with red wine jus. Side dishes to be determined.

I’m also considering making a chocolate soufflé cake for dessert - made one several years ago and my mom was in heaven!
