Eggs and Corn Flour Breakfast Galette:

Ingredients:

1) Eggs - 4
2) Bacon - 3 strips
3) Scallion - 1
4) Serrano pepper - 1
5) Broccoli - 2 crowns
6) Polenta - 1/4 cup
7) Corn flour - 1/4 cup
8) Cheese, cheddar/jack, shredded, divided - 1/4 to 1/2 cup
9) Salsa - as desired
10) Black mustard seed - as desired


Procedure:

-- Preparation --

1) Pan fry the bacon strips.
2) Cut up the bacon into pieces.
3) Cross cut the scallion into pieces.
4) Dice the Serrano pepper.
5) Chop up the broccoli.
6) Pre-heat the oven to 400F.

-- Cooking and Serving --

7) Mix Eggs, bacon, scallion, pepper and broccoli.
8) Mix in polenta and then, corn flour.
9) Mix in about 1/8 cup shredded cheese.
10) Oil a baking pan and pour the mix in.
11) Bake for 20 to 30 minutes till no wobble is detected.
12) Top with salsa and additional shredded cheese.

13) Bake for an addition 5 minutes.
14) Sprinkle on the black mustard seed.
15) Serve.
