Recipe Eggplant (Aubergine) My Way

Yum. I would never have thought to top crumbed eggplant with a creamy seafood sauce.

I always salt eggplant. Habit.

As for cheese & seafood - well. Australia had no food culture to speak of & so no one thought anything of mixing bite sized pieces of mixed seafood into a thick bechamel, topping it with a huge pile of grated cheese & gratinating it under a hot flame until bubbling & golden brown. It was a common entree here. It’s delicious.
 
I like using eggplant as a vehicle or platform for seafood. I considered eggplant planks topped with a soft shell crab with either crawfish or shrimp etouffee sans rice or topped with lump crabmeat sautéed in butter. I called around but could not find fresh soft shell crabs. I had the shrimp and ran with that.
 
Must admit I don't think I've had cheese and fish... or maybe I once made a lobster dish with cheese. I'm certainly not averse to the concept.
One of my favourite meals used to be [proper] smoked haddock with a cheese sauce. Sometimes we had smoked cod instead. Cheese went well with both of them.
