Christmas Market Reibekuchen + Herb Quark Dip recipe

Ingredients

• 500 g grated potatoes
• 1 medium size onion
• 1 egg
• 1 tbsp corn starch
• 1 tsp salt
• 1 tsp black pepper
• Vegetable oil for frying

Instructions

• Grate the potatoes into thin strips
• Squeeze out the excess liquid
• Add the corn starch and mix it until slightly consistent in texture
• Add the egg and mix it well
• Season with salt and black pepper
• Finally grate the onion and into the bowl
• Give it a quick stir until combined
• Heat up the oil in a pan to 170°C / 340 °F
• Transfer the mixture in batches to form 1 cm thick disc shapes
• Fry until crispy and golden brown on each side
• Transfer on a paper towel to get rid of the excess oil
• Serve with sour cream, dill, chives and dried mint mixture
