Recipe Gluten free muffins made with coconut flour

I have tried a million gluten free desserts. Some of them are good, but some of them have a horrible texture. I have had the best luck with recipes using coconut flour. My favorite muffins right now are blueberry lemon made with coconut flour and I also make a mean apple cinnamon muffin. I have made the recipes so many times that I guesstimate the ingredients but I can try to list a recipe here:

Base Ingredients
3 large eggs or 4 small eggs
1/2 stick of butter melted
1/3 cup of sugar (or sugar substitute of choice)
1/3 - 1/2 cup coconut flour
2-3 tbsp. flax meal (optional)
1 tsp baking powder
1/4 tsp baking soda
pinch of salt

This is the base recipe, for the coconut flour I find that different brands absorb slightly different amounts of liquid so start off with a third of a cup, stir it in and allow it to absorb. If it's still watery add a small amount at a time until it's the right consistency.

For the apple version I like to grate 2 small apples into the mix and add a generous amount of cinnamon.
For the blueberry & lemon version I usually add 1 cup of blueberries and 1/4 cup of lemon.

Obviously you can adapt this recipe to make any type of muffin.

As usual bake them for about 20 minutes or until golden brown on top and the knife comes out clean!
