A lovely healthy and great tasting meal.

Serves 2 to 4 depending on appetite. Recipe can be doubled or tripled easily.

INGREDIENTS

2 or 3 depending on size boneless/skinless chicken breasts or thighs
Juice from 1/2 of a lemon
Salt and pepper
1/4 cup EVOO

4 oz blackberries, picked through, washed and drained
4 oz raspberries, picked through, washed and drained
4 oz strawberries, picked through, washed and drained, halved or quartered depending on size
1/2 cup glazed cashews, almonds or pecans - glaze recipe below
2 heads romaine lettuce, washed, center stems removed, and drained
Red onion, honey, poppy seed dressing - recipe below

Glaze for nuts
1/2 cup cashew pieces, shivered almonds, or pecan pieces
1/8 cup brown sugar
1/2 Tbsp butter
1/4 tsp salt
pinch to 1/4 tsp cayenne, to your desired heat, also optional

Place a sheet of parchment paper on a heatproof surface, like a baking sheet.

Add all the ingredients to a nonstick skillet set over medium heat. Cook for about 5 minutes until sugar has completely dissolved, stirring frequently with a nonstick/heatproof spatula (silicone). Pour nut mixture onto parchment and working  quickly spread out the nuts. Allow to cool completely, then break apart as necessary. Can be made several days ahead. Store in an airtight container.

Dressing recipe
1 cup extra-virgin olive oil
1/2 cup white wine or sherry vinegar
1/4 cup honey
1/4-1/2 cup red onion, small dice
1 Tbsp dijon mustard
1 tsp salt
1/2 tsp black pepper
2 Tbsp poppy seeds

Add all ingredients to a blender except poppy seeds. Starting at low speed, then up to high, blend for about a minute until red onion pieces have been pulverized. Pulse if necessary. Stir in poppy seeds. Can be made up to 3 days ahead, refrigerate.

DIRECTIONS
Add the lemon juice, salt and pepper to a container or plastic bag large enough so chicken pieces can lay flat. Mix to dissolve salt. Add the oil and mix. Add the chicken and allow to marinate for 20 minutes up to 4 hours. Grill chicken until done, allow to rest for a few minutes, then slice.

To assemble, place lettuce in bottom of a large bowl, add some chicken slices, sprinkle berries and nuts around evenly. Add dressing as desired.
