This couldn't be easier to do and the taste is subtle and intriguing. You could eat these eggs just as they are or with a dip. A chilli dip would be good. I used them in a salad.

Ingredients
5 shelled hard boiled eggs
50 ml honey
25ml black rice vinegar
25ml light soy sauce
1 tsp toasted sesame oil (5ml)
150ml water

Method
  1. Mix together the honey, vinegar, soy sauce and sesame oil. Add the water and mix thouroughly.
  2. Submerge the eggs in the marinade for at least three hours. I left for 24 hours. Drain the eggs and serve.

If I wanted to do double the amount of eggs will I need to double the marinade or will it stretch to cover 10 eggs?

I think I marinated them in a jug or beaker so the marinade just covered them.. I can't quite recall but I think you will need double. Basically this is 200ml of marinade.

One way to tell is to put 10 uncooked eggs in their shell in the receptacle you are going to use to marinate. Cover in water. Drain the water into a measuring jug and that will tell you how much marinade you need.

Well I wasn’t patient enough to wait for a reply so I did 6 and they’re in the fridge already.
But I have ordered more eggs for a second batch as I think the boys would like them a lot so I’ll try out your water displacement method tomoz.
Along with the eggs yolk centring trick which I didn’t bother doing and I can already see my yolks are cattywampus.
 
Doesn't matter if they are cooked or not. Well, obviously! To be really accurate place shelled eggs in the water to measure and then pat them dry afterwards. Eggs in shells will take up a bit more space than shelled. I am stating the obvious!
