Recipe Hutspot - carrot & potato mash

It's an old recipe with quite a history Hutspot (Dutch Mashed Potatoes, Onions, and Carrots)

We never ate it at home as my dad hated it. I am not fobd of it, but I had potatoes and carrots and thought I could adjust it into something I would like.

So first the recipe
Normally 1 part by weight for carrots and onions (each) 2 part potatoes.
I used
1 part onion
2 part potato
2 part carrot
Couple bay leaves
Salt
Pinch of nutmeg
Mustard (optional)

Meat (I fried thinly sliced bacon in a seperate pan. Or use meat ball or sausages)

Boil onions, potatoes and carrots together with the bay leaves and salt
When the carrots are soft, potatoes and onions should be soft as well.
Remove bay leaves, drain. Add nutmeg (and mustard) and mash coarsely.
Add the bacon & grease
Serve with sausage or meatball (optional)

Not very exciting so I came up with 2 options.

Option 1
As above but no nutmeg and salt. But 5 cloves of garlic added
When frying the bacon, add Thai red curry paste to it. Fry and add when mashing the carrots, onions, garlic and potatoes.

Option 2
As option 1 but no Thai curry paste. I used sambal (like sambal brandal, doesn't need to be fried first, straight to the mash) and a dash of fish sauce
Plus the fried bacon bits and any left over Indonesian meat stew. I happened to have babi ketjap left and added that.

A definite improvement in my book :)
