Black Bean and roasted corn enchiladas. I make a couple gallons of "red sauce" twice a year. used up a precious frozen quart, but it is such a good use.
The good thing about tortillas is that they´re versatile. You can fill them up, you can fry them, you can make soup with them, you can make quesadillas... wonderful things.
