Italian Sausage Cacciatore

Ingredients:

1-2 Tbsp. Olive Oil
2 Sweet, Mild or Hot Italian Sausage links, casing removed (or 4 ounces of bulk Sausage)
1 C. Mushrooms (any type you like), large dice
½ C. Sweet White Onions, sliced “pole-to-pole"
½ C. Sweet Bell Peppers, sliced, diced or rough chopped, your choice
2-3 Garlic Cloves, minced
1 tsp. Dried Oregano
1 tsp. Dried Parsley
Pinch Red Pepper Flakes (or more if you like it spicy)
A good splash of Wine (red or white, whatever you have)
+/- 2 C. Marinara Sauce
Salt & Pepper to taste

Method:

In a medium-sized pan, heat the Olive oil over medium-high heat
Add the Sausage to the hot oil and break it up into bite-sized pieces
Brown the Sausage until it’s no longer pink
Add in the Mushrooms and sauté until well browned
Stir in the Onions & Peppers, cook until crisp-tender
Sauté the Garlic, Oregano and Parsley (and Red Pepper if using) until fragrant
Deglaze the pan with wine, scrapping up all the fond
Pour in as much Marinara as you like, I like it less saucy
Simmer the Cacciatore, partially covered, about 10-15 minutes
If the sauce becomes too thick to your liking, add some water
Taste for seasonings, does it need any S&P? Your call.

There is something about the word 'cacciatore' which I love. It means literally 'hunter' in Italian and is most often seen in recipes using chicken or rabbit. I suppose it might have been originally applied to game dishes. I like the fact you used Italian sausage here and of course, it has to have red wine!
