( Serves 5-6)
Ingredients:
2 medium tomatoes
1 small red onion
Fresh mint
Fresh coriander
1 fresh green chile pepper (or if it were for me, 3 fresh chiles)
Juice of ½ lemon or lime
½ tsp salt
½ tsp sugar

Method:
- Wash the tomatoes and the onion. Cut the tomato in half, peel the onion and cut into half.
- With a sharp knife, slice the tomato and onion into half moons. The thinner the slices, the better. Place in a bowl.
- Chop the mint and coriander leaves along with the fresh chiles. Add to the bowl along with the lemon/lime juice, salt and sugar.
- Mix well, and allow to rest for an hour or so, so as to develop colour and,more importantly, flavour.
