I've been to a couple of Keralan restaurants (The same little chain of three in London, I've been to one of the omni places and a vegetarian one). The food is amazing and I've been meaning to try my hand at a few recipes but not got round to it. Having just bought a few cans of jackfruit form Aldi (They had a 'vegan week)I google recipes and came across a Jackfruit Keralan curry by Sanjeev Kapoor.
I was very rushed sand did not have all the ingredients so here is my pared down version:

- 250g can jackfruit in brine
- 1/4 tsp turmeric
- 1 tsp coriander powder
- 1/2 tsp cumin powder
- 6 cloves
- 1 fresh chilli
- 2tsp minced garlic
- 2 tsp miinced ginger
- 2 tbsp dried coconut
- 1 tbsp tamarind pulp
- 1 red chilli
- 1 tsp brown mustard seeds
- 10 curry leaves
- 2 Chopped onion
- 3 Tomatoes
- In a mini blender mix ginger, garlic, turmeric, cumin, corriander, coconut, tamarind pulp and tomatoes
- Fry mustard seeds and curry leaves until mustard seeds pop.
- Add onions and fry until browning
- Add spice mixture and chillis and cook until oil separates.
- Add can of Jackfruit inc the water.
- Simmer for 20 mins.
