I've been to a couple of Keralan restaurants (The same little chain of three in London, I've been to one of the omni places and a vegetarian one). The food is amazing and I've been meaning to try my hand at a few recipes but not got round to it. Having just bought a few cans of jackfruit form Aldi (They had a 'vegan week)I google recipes and came across a Jackfruit Keralan curry by Sanjeev Kapoor.

I was very rushed sand did not have all the ingredients so here is my pared down version:

  • 250g can jackfruit in brine
  • 1/4 tsp turmeric
  • 1 tsp coriander powder
  • 1/2 tsp cumin powder
  • 6 cloves
  • 1 fresh chilli
  • 2tsp minced garlic
  • 2 tsp miinced ginger
  • 2 tbsp dried coconut
  • 1 tbsp tamarind pulp
  • 1 red chilli
  • 1 tsp brown mustard seeds
  • 10 curry leaves
  • 2 Chopped onion
  • 3 Tomatoes

  • In a mini blender mix ginger, garlic, turmeric, cumin, corriander, coconut, tamarind pulp and tomatoes
  • Fry mustard seeds and curry leaves until mustard seeds pop.
  • Add onions and fry until browning
  • Add spice mixture and chillis and cook until oil separates.
  • Add can of Jackfruit inc the water.
  • Simmer for 20 mins.
