Ingredients (for 1):
3 medium eggs
1 tbsp cream
½ tsp salt ( or to taste)
½ tsp freshly ground black pepper
1/2 small onion, sliced into rounds
1 tomato, diced
2-3 generous slices of Cheddar cheese
Butter for frying

Method:
- Beat the eggs with the cream, salt and pepper until frothy. Set aside.
- Heat the butter in a small frying pan until it sizzles. Add the onion and tomato and cook until the onion is just browned. Remove to a plate, leaving as much butter as possible in the pan.
- Crank the heat up to maximum and pour in the egg mixture. As the eggs begin to set, pull from the bottom of the pan with a spatula and allow the (still) liquid egg to run to the bottom.
- When the omelette is ¾ done (it takes about 60 seconds), add the onion, tomato and the cheese . Cook for 20 seconds, then flip one side of the omelette over the other to create a half-circle. 10-20 seconds more, and it's ready to serve.
