Recipe & Video Korean Style Beef Ribs (Apple and Doenjang marinade)

Ingredients

1.2 kg beef ribs
1 small red apple
1/2 onion
5 cloves garlic
1/2 tbsp grated ginger
1/4 cup mirin
1 and 1/2 tbsp doenjang paste
3 tbsp brown sugar
1 tbsp dried chilli flakes
Spring onions (garnish)

Method

Make sure ribs are cleared of any membrane. Combine remaining ingredients in a processor. Reserve 2 tbsp marinade. Pour remaining marinade over ribs in a suitable vessel to marinate overnight. I used a plastic bag. Place marinated ribs in a suitable oven dish and cover reasonably firmly with foil and bake for approximately 3 hours in a 150 degree celsius oven. After 3 hours remove foil, and gently turn ribs. Brush on reserved marinade and bake another hour or till ribs are done. Serve with rice and garnish with spring onion.

I think in a real Korean version they use an asian pear, which I believe are round and hard. But of course, wanted to use an apple for the challenge, plus I can't source an Asian pear where I am here anyway.
