An adapted version of Nigella Lawson's marzipan cake. Mine has lemon, vanilla & more flour.
Ingredients for a small loaf tin ( 25 cm)
150 g marzipan
175 g self raising flour
125 g soft unsalted butter
50 g white sugar
3 large eggs or 4 small eggs
1 pinch vanilla powder & 1 pinch salt
Juice of 2 lemons
1) Preheat oven to 150 degrees celcius. Chop marzipan into cubes and blitz them in a blender with the lemon juice.
2) Scrape mixture out of the blender and mix with the soft butter, vanilla, salt and eggs.
3) Then add the flour and stir until you have a small batch of glossy batter.
4) Pour into cake tin and bake for 40 minutes.
5) Let cool completely before eating, otherwise it might fall apart. Enjoy with red fruits of your choice.
