- 1 tsp cumin seeds
- 1 tsp brown mustard seeds
- 1 large onion, thinly sliced
- 3 tsp garlic (minced - I used from a jar)
- 1 tbsp ginger (minced - I used from a jar)
- 1 tin chopped tomatoes
- 1 tsp chilli flakes
- ½ tsp turmeric
- ½ tsp chilli powder
- 1 marrow (I used half a marrow and one large courgette). Peeled, deseeded and chopped into chunks.
- 1 tsp garam masala
- Fry cumin and mustard seeds until the mustard seeds start to pop.
- Add the onions and fry until turning brown.
- Add the garlic.
- Add the tomatoes, ginger, chilli flakes, turmeric and chilli powder. Stir to mix.
- Add marrow. Stir, simmer then covered. Stir every few minutes and add water as required (I found I needed quite a bit).
- Marrow should be soft in 20-30 mins.
- Add garam masala.
