Meatballs, meatloaf, Salisbury steak; what's the difference?

6 months in Mexico, and I can assure you, Mexican food is so diverse that the French would be horrified, the Italians would be amazed and the Spanish would be crying over their paella.

I agree! Mexican food, once you get out of the Americanized "tortilla, cheese, meat or veggies" rut, is pretty fascinating. I once tried making a Oaxacan mole negro. It was VERY good, but it had nearly 30 ingredients and was an all day job. Perhaps I will make some albondigas ( Mexican meatballs ) and serve in a mole. A mole that I pick up by the pint from The Red Iguana, a local Salt Lake City restaurant, known for its Mexican food. A lot easier than making a batch by hand. And maybe incorporate some zucchini into the dish for the current challenge. Hmmmm....

Mole is so , soooo underrated.I completely fail to understand why it's never on menus in Western civilization in general!
But then, you look at the way we've dumbed down Mexican, Japanese, Indian, Italian and Spanish food, I suppose it's not surprising.Franchises beat quality.
The first time I went to Mexico City, we were invited to a fancy restaurant in Coyoacán ( the (former) home of Frida Kahlo) called Los Danzantes. This was a starter: seven different moles from various regions of Mexico.

We have loads of really good international food festivals in Manchester. I remember a few years ago there was a Mexican guy. He was really proud of his mole. Wasted on me at the time.
