Don't use one. I've added a couple of things over the years, garlic and onion powders, beef broth, as she used all water, and fresh garlic cloves.Have you posted that recipe? I'm looking to try new things.
The 7-bone steaks used to be cheap, though not so much anymore. The one we got was $30, but it gave us 2 full meals for 2 people, plus there's 1 more serving. So, I guess about $36 with everything for 5 servings. Best of all, minimal prep and pretty much hands off cooking once started.
It's just sprinkle s&p on 1 side of a thick cut 7-bone steak/roast, along with some garlic and onion powder, then dust with flour, rub in, then put in a heated Dutch oven type pan with some vege oil to brown, while repeating rub on other side, flip, brown. Add 2 or 3 cans plain stewed tomatoes depending on size of roast, an appropriate amount of chopped onion and celery, plus 2 or 3 well smashed garlic cloves, 1/2 to 2/3 can (the stewed tomatoes empty can) of both beef broth and water, cover and simmer until almost fall off the bone tender, usually 1.5 to 2 hours, stirring occasionally, turning steak over once at midpoint, then remove cover to reduce sauce to a gravy like consistency and steak is falling off bones. Sometimes if sauce isn't fully reduced, I'll make a cornstarch slurry to thicken more, particularly when someone is hungry and doesn't want to wait anymore. Serve with mashed potatoes.
