Ciao a tutti,
This very easy an is from my nonna, I cannot make as can not find ingredient I need but may be some can find. This beautiful with nice toast an cheese.

You Need -
  • 243 g. dry figs, fine chopped.
  • 4 tablespoon olive oil.
  • ½ onion, thin sliced.
  • 1 shallot, puree.
  • 1 tablespoon dark brown sugar
  • 300 ml cup balsamic vinegar
  • 350 ml vegetable broth
  • ½ teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 2 tablespoon olive oil
  • 240 g purple grapes, coarsely chopped
  • 240 g pitted kalamata olives, coarsely chopped
  • 1 teaspoon finely chopped rosemary
Method -
  1. Heat oven 400 f.
  2. Put pan on medium heat. Put inside chopped fig, olive oil onion an shallot,
  3. Stir until onion soft an brown to edges.
  4. Put inside pan sugar, vinegar, vegetable broth, salt, an pepper bring so boil. Turn heat down to simmer 30 minute.
  5. Continue simmer until look like Jam consistency.
  6. Take pan from heat so set one side.
  7. Mix 2 tablespoons olive oil, grapes, olives, an rosemary in a baking dish.
  8. Roast in oven until skins come soft an grapes an olives release much of their juice.
  9. Take from oven an whiz slight in processor then fold in fig jam mix.

I really love the sound of this Saranak. I don't know if I'll be able to get the key ingredients I don't have (figs and grapes) but if I can, I will make it and add a photograph.
