Pineapple Skewers with Honey-Thyme Glaze
Serves 6

Ingredients
3 TB honey
2 tsp unseasoned rice vinegar
2 tsp fresh thyme leaves
1 medium pineapple (about 1 pound)

Directions
In a small bowl, mix the honey, vinegar, and thyme leaves.

With a sharp chef’s knife, slice off the top and bottom of the pineapple. Cut away the peel. Slice the pineapple in half, then cut each half lengthwise into 6 equal slices. Cut away the tough core from each piece. Thread each piece of pineapple on a skewer.

Preheat a grill or grill pan to medium-high. Grill the pineapple until warmed through and grill marks appear, about 6 minutes, turning once and basting several times with the glaze.
