Plans for today (2025)

Yeah, because he couldn't give me a definitive answer, it's going to be the prosciutto wrapped asparagus with Italian cheeses (also cooked with onion and slivered red bell pepper then some diced tomato added the last few minutes of cooking). It almost tastes like a crustless vege and prosciutto pizza when all is said and done. It's not a bad meal for later at night since it's mostly vegetables and isn't a gut bomb just sitting in the stomach.

The usual pet cleaning and a slight move around ready for the arrival of our new sofa arriving on Tuesday
Perhaps a new sofa pic in the ‘Good News’ thread? I love to see a new sofa. Think it has to do with knowing how long it takes to part with the old generally knackered one 😂

I'm going to make gulab jamun today, for a celebration party on Wednesday.
Then I'm going to watch IPL, and by the time that finishes, it will be 2pm.
From 2pm onwards, I may just do something intellectually challenging, like count the leaves on the mango tree.

It is coming along but will need to be moved onto the dining room table before I do much more.

Oops, overcooked the potatoes for the salad so that's now mashed potatoes and deviled eggs...
Been there, done that. My SE Texas grandmother (and my aunts) always used rather soft potatoes in potato salad so that they were semi mashed from stirring the ingredients in, and that's how I like to make them. There is a point when they get cooked so much that there aren't any lumps, though. I have, in the past, boiled just a few potatoes after overcooking the first batch and mixed them in together so that there was some potato chunky texture going on. It makes for an extra large batch of potato salad, but I find that when sealed properly and stuck in the coldest part of the frige, lasts quite awhile. I'm pretty weary of potato salad for quite awhile afterwards.

My youngest daughter is coming over by herself at around 6. She won't stay long as she and her husband just moved everything out of their apartment in Indianapolis and into their house here in Akron (she was working in Indy for a few years but she got another promotion and they transferred her back to Akron). So they moved Thursday and her hub is still trying to organize and fit all the extra stuff they had from the apartment in their house...I sense a garage sale in their future, LOL. Anyway, I am making a seafood and veggie quiche. Well probably 2 so she can take some home to her DH.

Getting ready to clean up a little bit before she comes over. The house isn't too bad, just a little cluttery in the dining room and hall area, plus I need to tidy up the guest restroom.

Edit: her husband heard "seafood quiche" and now has time to take a break for dinner, LOL!

This was one of those large baking potatoes which was the only bag they had at Aldi so now I've a massive amount of mashed potatoes. I usually don't buy those but didn't want to drive across town either. I spend less going to Aldi so try to avoid Walmart with Kroger and Publix being for specific item(s) only; no actual shopping.
