Pork Chop with Red Rice in Currant Wine Sauce:

Ingredients:

1) Pork chop, boneless (thick) - 1
2) Red rice - 1/8 cup dry
3) Black currant preserves - 1/4 cup
4) Wine, Cabernet Sauvignon - 1/2 cup
5) Shallot - 1/2 large
6) Garlic - 1/4 cup
7) Anaheim pepper - 1/2
8) Mushrooms, crimini - 6 to 8
9) Soy sauce - as required
10) Olive oil - as required
11) Oregano - 1 to 2 tspns.
12) Cilantro (coriander) - 1 to 2 tspns.
13) Paprika - 2 tblspns.
14) Water - 1/2 cup


Procedure:

1) Boil water for the red rice.
2) Add the red rice.

NOTE: Stir the rice frequently while proceeding with the recipe.

NOTE: Reduce the amount of water gradually and keep the rice slightly chewy. Do not discard water as the brown rice paste should be kept.

3) Mix currants, wine and spices in a small bowl using a spoon.

NOTE: Mix until the currant dissolves in the wine.

4) Cross slice the shallot and Anaheim pepper.
5) Dice the garlic.
6) Transfer the shallot, Anaheim pepper and garlic to a fry pan.
7) Add a reasonable amount of olive oil.

8) Heat the shallot, pepper and garlic till all brown and toast.

NOTE: Turn the ingredients and stir frequently.

10) Add soy sauce and stir it in.
11) Add the pork chop and cover while heating all on medium heat.

NOTE: Continue to stir the mix and turn the pork chop to brown both sides. Keep covered to promote cooking of the pork chop and keep it moist.

12) Add mushrooms to rice when the water level is nearly gone.

NOTE: Continue to stir the rice and mushrooms and continue to reduce the water content. When there is but little water left, remove from heat.

13) Add rice and mushrooms to the shallots, pepper and garlic in the fry pan and stir and turn to mix.
14) Drizzle some wine on the pork chop and later do the same with the other side.
15) Add the currants, wine and spice mixture.
16) Stir and turn the mixture, continuing to heat all.
17) Coat the pork chop and turn it, coating the other side.

NOTE: Keep the fry pan covered and continue to cook for ten minutes.

18) Remove from heat.
19) Transfer the pork chop to a serving dish.
20) Transfer the rice, shallot, pepper and garlic mix to the dish.
21) Serve.
