Recipe Potato wine (take 2)

Potato Wine
  • Wash well but do not peel 1/2 gallon small potatoes.
  • Put them into a pan with 1 gallon of water.
  • Bring to boil for 5 min (If any longer the potatoes might burst and make wine cloudy)
  • Have ready a stone jar or bowl.
  • Put into the jar 3 lb Demerara sugar, the rind of 2 sliced lemons.
  • Strain over this through a sieve the boiled liquor from the potatoes, stir the dissolved sugar, and return to pan.
  • A piece of bruised ginger may be added if liked.
  • Boil for 1/2 hour then strain into bowl and when cold bottle, add about a couple of raisins to each bottle.
  • Cork lightly.
This wine is delicious if kept over 12 months.

This is a simple (allegedly Yorkshire) recipe requiring no special equipment. No, I haven't tried making myself and I don't know what is meant by 1/2 gallon of potatoes! I suppose it means filling up a gallon sized pan to halfway with potatoes. Anyway, this recipe could be scaled down to a quarter of the quantity, thus:

  • Wash well but do not peel 1/8 gallon (a pint measure?) of small potatoes
  • Put them into a pan with 4 pints of water
  • Bring to boil for 5 mins
  • Put 12 oz of Demerara sugar and the rind of (lets say 1) lemon into a bowl and strain over the liquid from the potatoes.
  • Return to the pan (minus the potatoes!)
  • Boil for 1/2 hour and then strain into a bowl,
  • When cold, bottle and add a few raisins to each bottle

Ah...you spotted it! Nevertheless...
Be doing well! Its not been there for 100 years. Some claim to have seen it, on their way from the nearby pubs though.
