Ingredients: ( Serves 2 )
3 medium potatoes
1 small dry chorizo sausage*
2 cloves garlic
100 mls cream
splash of milk
butter
parsley
salt and pepper
* I found these in the supermarket. They were about 4"long. Use cut chorizo and chop it smaller; same effect.

Method:
- Slice the potatoes thin; about 1/2 cm /1/4". cook in boiling salted water for 8 minutes, remove and set aside.
- Remove the skin from the chorizo and cut into smallish pieces. Heat the butter in a small frying pan /skillet and add the chorizo. cook gently for about 5 minutes.
- Slice the garlic into thin rounds and add to the chorizo. Fry for about 1-2 minutes, until the garlic has lost its pungency.
- Add the cream and the milk. Stir until the mixture begins to bubble. Season with the salt and pepper, then remove from the heat and add the parsley.
- Heat the oven to 400F.
- In an ovenproof dish, arrange the potato slices in a layer, then spoon over some of the cream mixture. Repeat with another layer of potatoes, more cream, and continue until all the potatoes/cream are used up. If you want to grate some cheese over the top, be my guest.
- Bake in the oven until browned on top.
