Recipe Quinoa, Mango, Orange and Raspberry Parfait

Quinoa, Mango, Orange and Raspberry Parfait:

Ingredients:

1) Quinoa - 1/4 cup
2) Banana - 1/2
3) Orange - 1/2
4) Mango - 1/4 cup
5) Raspberries - 1/4 cup
6) Yogurt, vanilla - 1/2 cup
7) Whipping cream, heavy - 1/4 cup
8) Cocoa powder - 2 tblspns.
9) Powdered sugar - 1 tblspn.
10) Vanilla - 1 tspn.
11) Whipped topping, extra creamy - as required


Procedure:

1) Boil quinoa in twice as much water (1/4 cup).
2) Cover the pot, turn off heat and allow to steam and puff.
3) Set aside to cool.
4) Peal and mash the banana.
5) Mix the banana, quinoa and yogurt together with 1/2 mango, orange.
6) Set aside.
7) Peal the orange and separate the wedges.
8) Cut each wedge in 1" pieces.
9) Cut the mango into 1" pieces.
10) Sift together the cocoa powder and powdered sugar.
11) Add heavy whipping cream and vanilla.
12) Whip the cocoa cream in a blender.
13) Pour the quinoa, banana yogurt mix into a dessert glass(es).
14) Layer on the other half orange and mango pieces.
15) Spoon in the cocoa cream and give it a swirl top.
16) Cover with whipped topping as desired.
17) Drop on some raspberries.
18) Serve.
 
Very nice!
As breakfast even, but definitely as dessert.
I like the fact there is not much sugar added.
I am thinking coffee flavoured cream would also work?
