Quinoa Sausage and Cabbage Soup:

Ingredients:

1) Red Quinoa - 1/8 cup
2) Sausage link (preference) - 1
3) Cabbage - 1/8 to 1/4
4) Shallot - 1
5) Habanero Pepper - 1
6) Celery - 1 stick
7) Tomato, Roma - 1
8) Achiote paste - 2 tblspns.
9) Water - as required


Procedure:

1) Boil quinoa in twice as much water (1/4 cup).
2) Cover the pot, turn off heat and allow to steam.
3) Cross cut the sausage.
4) Cross cut and halve the shallot.
5) Chop the cabbage into about 1 to 2" pieces.
6) Dice fine the habanero pepper.
7) Dice up the tomato and celery.
8) Add all ingredients to the pot with the quinoa.
9) Add water to a level to just cover ingredients.
10) Bring to a boil on low heat.
11) Add achiote paste and stir it in.
12) Lower the heat and simmer for 5 to 10 minutes.
13) Stir and evaluate the texture of the quinoa.

NOTE: The quinoa should not be allowed to get mushy. It should be softened, but still have a stiffness, slightly puffed.

14) Serve.
 
Looks very nice, and an interesting way to use quinoa in combination with other ingredients. Well done!
