I'm fascinated by old cookery books and I have a small collection. I think there may be others here who also collect old cookery books or who are interested in 'retro recipes'. Is so, please feel free to post a retro recipe as a new thread.

This recipe appears in 'Breakfast Dishes and Savouries' by C. Hermann Senn, 1923.

The recipe is not laid out as a recipe but rather as a discursive paragraph - so I've attempted to transpose it into a recipe format. As I love spinach and mushrooms I was attracted to this dish. All is well until it gets to the final stage when you have to pipe puréed potato around each mushroom! I suppose it would look very decorative. Please also note that this is listed as a breakfast dish.

If I get time, I'll attempt to make and photograph this.

Ingredients
2 lb spinach
8 small cup mushrooms
6 rashers of streaky bacon
1 gill of white or brown sauce
A little potato purée
1/4 gill of stock or gravy

Method
  1. Pick, wash and boil the spinach with very little water. Drain well.
  2. Heat up the sauce, add the spinach, reheat and season to taste.
  3. Trim the bacon, cut into short pieces, fry lightly and place on a plate.
  4. Peel the mushrooms and fry them in the bacon fat.
  5. Put the prepared spinach and slices of bacon in a fireproof casserole dish.
  6. Pour over a little stock or gravy and cook in the oven for 15 mins.
  7. Place the mushrooms neatly on top and pipe a neat border of potato around each one.
  8. Reheat and serve.
