Have you ever made sauce by starting a mash? The mash ferments and the "juice" is used for the sauce. Many popular US brand hot sauces are made using a mash.
Yes, I've made mostly fermented sauces last year and they of course taste different and stronger! It takes a bit more time, but definitely worth it! I may post a video recipe of those recipes in the future.
