Sandwiches

I now have tons of ideas which have occurred to me for sandwiches. But as I'm all on my own its not likely I will make many of them. However, I bought some corned beef slices (the UK sort that also comes in tins) as I did suddenly get a craving... maybe tomorrow. And then there are those coldwater prawns...
You could always make a po' boy with the prawns. I used to love those. I really love them with oysters.

How do you make a po'boy with prawns? We don't really have po'boys here and I never made one.
Well the prawns would be breaded and fried, so if you don't care for fried shrimp/prawns you wouldn't enjoy a po boy.

Sometimes they have mayonnaise on them. I like tartar sauce. You might enjoy the roumelade instead.

Ah. I had it in mind that po'boy was with meat (which it can be) so I thought you maybe it was surf 'n turf. Breaded prawns is fine but I have such pretty pink prawns it seems a shame to hide them.we will see...

Roumelade would be more traditional given the region the sandwich came from. When we order them in NOLA, New Orleans LA, you can get either roumelade sauce or mayo. Remember the PO boy sandwich came from the working class along the Gulf Coast, kind of like a ploughman's lunch, so it had as much oomph as you could put between 2 pieces of bread.

Oysters are more typical than prawns. A lot of what is sold nowadays caters to tourists tastes and not the traditional fare the meal was envisioned as.

You remember where I'm from, right? I wasn't born in Louisiana but my dad was. I know you probably spent waaaaay more time in New Orleans than I did, but I've probably been there about 100 times since I only lived 4 hours from there.

I personally don't love remoulade. You can get a po boy with whichever condiment you prefer.
