Homemade McMuffins with sausage instead of ham. Hash browns.

Basically, pancake batter with the eggs separated and the whites whipped to stiff peaks and folded back in, along with some rum-soaked raisins.

Just before serving, it’s torn into pieces and browned a little bit in the skillet, the center stays custardy, then served, usually with plum compote or jam…but if it’s a pancake, then maple syrup is a requirement around here. Sorry, Kaiser Your Excellency, Sir! 😉

I found four frozen Pillsbury Buttermilk Biscuits at the bottom of my indoor freezer, thought that a Biscuit McMuffin would be tasty.
UMMMMM ... the biscuit it self was horrid... I looked at the package and the "best by" date was June 2023 :ohmy:
 
It's cold, it's been raining now for over a week straight, it's nasty, it's very foggy and I just to wrap my hands around something warm...

... a very large bowl of Oatmeal, topped with diced fresh Apple, a good shake of ground Cinnamon, a big nob of Butter and a wee bit too much Brown Sugar, that Apple was pretty sweet on it's own.
I thought about pouring in some Cream, but I like my porridge thick.

UMMMMM ... the biscuit it self was horrid... I looked at the package and the "best by" date was June 2023 :ohmy:
I "gutted" these breakfast sammies and made nice piece of white bread toast, gobs salted Butter ala TastyReuben, reheated the "guts" and folded the toast over it - no photos, but you get the picture...
 
The piece of pork belly I bought with the intention of making bacon never happened and late in the evening on Monday I was looking at an expensive piece of meat in that annoying state of ‘cook me now or I’ll end up in the bin’
As I was away the next day I threw it in the slow cooker in a brine (sugar, soy sauce, a splash of water) with a fair amount of flavourings and left it to cook overnight.
Then chilled it, and today sliced it a shallow fried it.

Soft scrambled eggs (most Brits favoured way of having scrambled eggs) and experimental kitchen’s ‘Fat Bacon’

It was a huge hit. I can see it going down well as part of a full English. It tasted just like bacon (but without the nasties) so I’ll definitely be doing this again. I’ve suggested trying it out as part of a Full English this weekend which was met with applause 😂
