Ingredients:
- 500 g flour
 - 1 cup luke warm water (250 ml)
 - 2 tsp instant yeast
 - 1 tsp sugar
 - 2 tsp salt
 - ½ cup grape molasses (alternatively pomegranate or maple syrup)
 - ½ cup water
 - 1 tsp flour (to thicken the molasses)
 - 150 g sesame seeds
 
Instructions
- Mix flour and salt in a large bowl
 - In a cup mix 300 ml luke warm water with 2 tsp yeast and 1 tsp sugar
 - Add the yeast water mix to the bowl and mix until a dough forms
 - Knead the dough until it’s smooth
 - Cover and let it rest and rise for 1 hour
 - In the meantime, lightly roast the sesame seeds in a pan
 - Transfer the roasted sesame seeds to a large plate
 - Mix the grape molasses with water
 - Add 1 tbsp flour and mix until no flour remains visible
 - Divide the dough into 6 - 8 equal pieces
 - Roll them into thin strips, rope shapes, approximately 40cm long
 - Roll two ropes in opposite directions to make a twist or fold one
 - Alternatively make longer ropes (70 – 80 cm) and fold into two and twist the folded rope twisting one end while holding the other end
 - Pinch the ends on both sides together to form a circle.
 - Dip the circle shaped doughs into molasses mixture and make sure they are fully covered with the mixture
 - Then dip into the sesame seeds to coat the doughs with sesame seeds
 - Pre-heat the oven to 220°C / 430°F
 - Place a tray filled water on the bottom of the oven. This will help to create a crust on the bagels
 - Bake the bagels for 20 minutes until they are golden brown on the outside
 - Enjoy with some cheese and a cup of tea!
