Recipe Smoked salmon and honey and lime glazed prawn salad

  • 2 tblsp honey
  • 1 tblsp lime juice plus zest
  • 1 tablespoon olive oil
  • 2 tsp chopped garlic
  • 1⁄2 tsp Kashmiri chilli powder
  • 1⁄2 tsp salt
  • 8 freshwater prawns, peeled and deveined
  • 1 pat of butter
  • 4 or 5 slices smoked salmon
  • 6 lettuce leaves
  • 1 tomato, sliced
  • 1⁄2 cucumber, sliced
  • 1⁄2 tsp lime juice


Mix the honey, lime juice and zest, olive oil, garlic, chilli powder and salt in a saucepan and bring to the boil. Simmer for 5 - 6 minutes.

Allow to cool slightly then dip each prawn in the liquid ensuring it is fully coated. Fry the prawns in the butter for 2 minutes each side. Allow to cool.

Spread the lettuce leaves, sliced tomato and sliced cucumber on a plate and top with the smoked salmon. Sprinkle over more lime juice and top with the fried prawns.

It would have been a little too sweet for me probably. And it was very "thick". Although I squeezed quite a lot more lime juice over the finished dish than the 1⁄2 tsp.
Yeah, more lime juice, or maybe a little rice vinegar to balance out the sweet?
