Recipe Smoked Salmon with Cucumber Jelly

This is a little number I occasionally make for parties. It´s really easy to make and doesn´t cost too much, plus it´s an interesting combination!
For the cucumber jelly:
50 mls rice wine vinegar
50 gms sugar
2 tsps powdered gelatine
250 gms cucumber
For the salmon/curry mayonnaise:
200 gms smoked salmon
50 gms mayonnaise
1 tsp lemon juice
1 tsp good quality curry powder
1 tsp garam masala
Capers to decorate
  • Wash and chop the cucumber. If you want to peel, do so, although it´s not necessary.
  • Put the rice vinegar, sugar and cucumbers in a blender and blend until smooth.
  • Pour the contents of the blender through a sieve.
  • Stir the gelatine into the cucumber liquid until it dissolves, then pour the liquid into a suitable receptacle to set: you can use a sheet pan ( the jelly will then be diced), a shot glass, a small wine glass, whatever you wish. Place in the refrigerator until the jelly has set.
  • Cut the salmon into bite - sized strips and set aside.
  • Mix the mayonnaise with the lemon juice, curry powder and garam masala. This may take a while to ensure all the ingredients are well-mixed.
  • To assemble: place a slice of smoked salmon on the jelly, then add a tsp of the curry mayonnaise. Decorate with a caper or two - or a sprig of dill.
