Cooking time: 15-20 minutes
Ingredients:
1 kg spinach, stalks removed
2 leeks, white and green parts
2 red peppers
2 medium onions
8 cloves garlic, peeled and finely chopped
300 g rice, rinsed and drained
3 tbsp olive oil
Salt and pepper, to taste
Mint, fresh or dried, to taste
Method:
- Thoroughly wash the spinach and tear into small pieces. Clean and chop the remaining vegetables.
- Heat the olive oil, and add the spinach and chopped vegetables. Cook until the onion is translucent and just starting to brown.
- Add the garlic and cook for a further couple of minutes
- Add 500 ml water and bring to the boil. Then add the rice and cover. Boil for 2 minutes, then lower the heat and simmer until the rice is tender, adding a little more water if necessary.
- When the rice is done, add salt, pepper and mint to taste, then re-cover and turn off the heat. Allow the rice to steam for a couple of minutes, then fork through and serve.
