Recipe Spice Islands Chicken Fried Rice

Spice Islands Chicken Fried Rice:

Ingredients:

1) Chicken half breast - 1/2
2) Rice Blend - 1/8 cup dry with equal mix of the following
- White rice
- Brown rice
- Red rice
- Black Rice
- Long grain wild rice
- Farro perlato
3) Mixed vegetables - 1/8 cup
4) Onion - 1/8 cup
5) Garlic - 4 to 5 tspns.
6) Serrano pepper - 1
7) Egg - 1
8) Chicken better than bouillon (BTB) - 2 tspns.
9) Black currant preserve - 1 tblspn.
10) Spice Islands mash - 2 tblspns.
11) Peanut oil - as required
12) Wine, Pinot Noir - 1/8 cup
13) Water - as required


Procedure:

1) Boil water and add rice.
2) Dice the chicken, onion, garlic and Serrano pepper.

NOTE: When rice begins to soften, remove from heat and drain water.

3) Simmer the rice in wine and black currant.
4) Mix in chicken, vegetables, onion, garlic, pepper and BTB.
5) Simmer and allow to thicken.
4) Oil a frying pan or wok.
5) Heat the oil on medium heat.
6) Add rice mix, black currant and egg.
7) Fry at medium high heat while turning the rice to toast and brown.
8) When satisfied with the frying of the mix, remove from heat.
9) Serve.
