This is a very common smoked paparika ( Pimentón de La Vera, Extremadura ) sauce which is used in a wide variety of récipes and of course on the renowned Tapa, Patatas Bravas ..
Here is the classic .. ( Note: This sauce does not have minced garlic or onion, however, if you wish to create your own versión, then add minced garlic and / or onions ) ..
Recipe:
1 cup or 250 ml. home made beef broth from home made beef stock
2 tablsps or 30 ml. White wine vinegar or sherry vinegar
3 tablsps of home made tomato sauce ( Marinara )
1 Dried Cayenne Chilie Pepper ( crumble ) called a " guindilla "
1 / 4 teasp of Pimentón de La Vera sweet ( dulce ) ( smoked Spanish paprika )
1 / 4 teasp of Pimenton de La Vera Picante ( spicy )
1 Tsp of Tomato paste
30 grams or 2 tablsps of Unbleached flour all purpose
Evoo ( 2 tablsps )
A Deep skillet
1 ) Heat the Evoo in a Deep skillet ..
2) Add the flour and the 2 Smoked paprikas.
3) Now, gradually and very slowly add the beef broth and stir it constantly clockwise until it thickens a bit.
4) Add the vinegar and the crumbled dry chilie pepper and simmer on slow flame for 8 to 10 minutes ..
5) Add salt and freshly ground black pepper ..
6) Add the tomato sauce .. Stirring for 2 to 3 minutes until well incorporated ..
7) Last but not least, add the tomato paste and stir for another 2 or 3 mins. until well combined.
