Recipe Spinach,Pineapple and Bacon Salad

Ingredients:
( Serves 4)
200 gms fresh spinach, chopped
50-60 gms fresh pineapple, diced into small pieces
6-8 rashers smoky bacon, Cut into squares
For the dressing:
50 mls olive oil*
15 mls white wine vinegar*
1 tsp strong mustard
1 tsp brown sugar
1 tsp salt
1 tsp pepper

* I have to admit, I winged it on these two. I generally use 3 parts olive oil to 1 part vinegar, so take it from there.

Method:
  • Chop the fresh spinach and mix together with the pineapple pieces
  • Fry the bacon gently until browned. Sprinkle on top of the spinach/pineapple mixture
  • Just before serving, drizzle the dressing over the top.

A seemingly simple combination which can work magic I think. Its that combination of sweet acidic pineapple with smokey fatty bacon and innocent spinach. The spinach tries to look the other way and say 'I have nothing to do with this' but can't resist getting involved.

I'd be inclined to leave out the olive oil and use the fat from frying the bacon instead.
