Ingredients:
( Serves 4)
200 gms fresh spinach, chopped
50-60 gms fresh pineapple, diced into small pieces
6-8 rashers smoky bacon, Cut into squares
For the dressing:
50 mls olive oil*
15 mls white wine vinegar*
1 tsp strong mustard
1 tsp brown sugar
1 tsp salt
1 tsp pepper
* I have to admit, I winged it on these two. I generally use 3 parts olive oil to 1 part vinegar, so take it from there.
Method:

Method:
- Chop the fresh spinach and mix together with the pineapple pieces
- Fry the bacon gently until browned. Sprinkle on top of the spinach/pineapple mixture
- Just before serving, drizzle the dressing over the top.
