Recipe Steamed bao buns

I prefer water/summer kimchi and actually have some in refrigerator right now that I used as part of a banchan recently. We used to watch the show Kimchi Chronicles, hosted by Marja and Chef Jean-Georges Vongerichten. She was a Korean child adopted by American parents, IIRC, and decided to explore her Korean heritage. Saw she had a chicken sandwich recipe on her site.

[edit - I forgot to also mention that we turn the bao over, seam-side down on a piece of parchment or waxed paper before steaming or baking - my personal favorite is baked Manapua.
I think, if I remember right, seam side down otherwise they'll "fan open". I've made these years ago after my wife bought some that were frozen at the Korean store.
