The CookingBites recipe challenge: cooking oils/fats

This isn't a challenge entry (at least not for oils). My Indian lemon pickle is fermenting away quite nicely now. It would have qualified here with the amount of oil in it, but it was made for the pickles challenge instead. It is smelling incredibly as it ferments away at the moment.

There's 6 tsps of Kashmiri chilli peppers in there and my Kashmiri chilli pepper powder is incredibly strong. It has a few more weeks yet.

Almost all red liquid is oil! I'm expecting to remove some when it is finally transferred to jars.
 
Non-entry? Please don't do that to us. We're all anxiously awaiting a recipe!

Defo a non-entry. I will write it up shortly. I was waiting for some of it to be eaten before doing that because I wouldn’t want to write up a duff recipe! I can confirm everyone (including me) loves it. I will definitely be making it again, it’s a lot of reward for a little effort.

Yum!!! Reminds me of making my Sriracha Sauce.

Just thought it would be nice to show as after all, it is an oil challenge :)
I think you should write up a quick recipe and link it into your entry. It's very impressive IMO to showcase something like that.

This is wonderful. I’ve made preserved lemon, and I’ve made many different types of pickles. But, never quite like this.
 
Oh, my. Every time I see a movie set in India, it seems that somebody is getting one of these from a roadside stand. I don’t know why I’ve never made them before, but I’m about to change that.
Yeah they do seem very popular there! I never seen them here outside of Indian restaurants though, so had to make them myself. Not dissapointed by the results ☺️
 
Here's a thoroughly eclectic, but authentically Indian dish: Achari Paneer (Indian cottage cheese in pickling spices)
Many Indians (mostly hindu) do not eat meat, but they will consume paneer - basically a cottage cheese which is pressed to remove the liquid. The first thing that comes to mind when you read "pickling spices" is probably yellow mustard seeds, coriander seeds, black peppercorns, etc. - but that does not apply to Indian cuisine. Their pickles (Achar) use oil, often pungent mustard oil, fennel, black mustard, nigella, chile and cumin seeds.
Marinating the paneer in yoghurt gives it a distinctly creamier flavour and contributes to a softer final product. I dumbed it down a bit because the thought of loads of mango pickle-marinated oil filled me with "OMG it's going to burn my head off".
I served it with homemade tamarind chutney.

The rules for uploading recipes on CookingBites in general can be found here. We don't permit recipes not being written up on CookingBites. We're not a link sharing site. We have no issues with members writing the recipe up here and adding a link back to their site is they want to.
