The CookingBites recipe challenge: cooking oils/fats

If by the time I get up tomorrow (at 6am Australian time) The Late Night Gourmet has not appeared, I will use the rule
  • The judge's (or the site's owner if the judge is not around at the end of the challenge) decision is final, and the new winner will select the next ingredient and the time frame...
and announce a winner. That is 18 hours from now (though by the time I have had breakfast and seen my OH off to work, it will likely be 19 hrs time)

Edited to add: I have set the countdown timer accordingly.

Sorry folks...we've had a big issue at work that's been dominating every waking moment (and haunting my dreams). I've been looking at the entries all along, but I missed the last few. So, I plan to tell my boss that I have more important things to do, and their big issue is just going to have to wait.

Seriously, I'll give this a look soon and provide a verdict later today.

Even though the ingredients in the recipe challenge are commonly used in recipes, I was impressed by the creativity displayed throughout. There were entries that showed me how to make things that I love, and others that created things I never knew existed. This challenge hits all the notes for what a recipe challenge should involve.

First, a recap of the entries:

Badjak

Recipe - Aubergine a la Nonna

Barrie

Recipe - Make Your Own Tallow

kaneohgirlinaz

Recipe - Hawaii-Style Cold Ginger Chicken
Recipe - Spicy Chili Crisp Oil
Recipe - Creamy Hot Buttered Rum

Karedekoolaid

Recipe - Achari Paneer (Indian cottage cheese in pickling spices)

Medtran

Recipe - Spinach salad with hot bacon dressing
Recipe - Tomato confit
Recipe - Immersion blender Hollandaise

Ms Mofet

Recipe - Ms. Mofet's Deep Fried Mushrooms
Recipe - Ms. Mofet's Ketchup and Honey Vinaigrette

Windigo

Recipe - Jalebi (Indian sweet fried dough) drenched in rosewater syrup

And a non-entry that would have been a strong contender:

Sandwichshortofapicnic

Recipe - Rillette

This was a really tough decision. Every recipe here has merit, and I do plan to make more than 1 of them. But, I found myself really intrigued by badjak's recipe:

Recipe - Aubergine a la Nonna

I kept re-reading it, and I realized that - as simple as it seems - it's rather nuanced. It wasn't clear the first (or second) time I read through it, but there were 3 different preparations, each with a different oil.

Congratulations, badjak! Now, it's your turn to pick a recipe.

Please note that SandwichShortOfAPicnic' Rillette is emphatically not an entry!
