The CookingBites recipe challenge: leeks

I'm new to this forum, so hopefully I'm doing this right. Either way, I had to make something for dinner tonight, lol.

No worries, I added it, and just know that it took me about four recipes and a lot of handholding before I could enter one on my own without missing something, so you’re already better than me. :laugh:
 
I actually have 3 recipes and the things for them, but am not going to be able to get them all in before deadline due to needing to use up leftovers and quick perishables. So, if we could have a few more days that would be great.

Of course. We usually end up extending the deadline by a few days or even a week. I'll extend it until end of day UK time Monday 20th October.
 
Funny thing, I saw this recipe just before this challenge was announced and thought that it sounded interesting.
A savory rather than sweet Muffin, never had one before, so let's give this recipe a whirl, shall we?

Leek Muffins

I tried one still warm from the oven.
These are very unusual Muffins indeed!
It's not that I don't care for them, it's just that I've never had one quite like this, very different.
I think as a side to a dinner would be nice, but on their own, meh, I don't know. Again, very different.
Oh, and let's throw into this "mix" that I have:
A) Never eaten Leeks, at least that I know of
B) Never cooked with Leeks before
I really wasn't sure what to expect.

It just popped into my head that I would probably put this Muffin the same class as say Garlic Bread, you know the Texas Toast sort.
A savory bread, yeah, that's it!!!
I took the leftover Muffins along with a small batch of my Spicy Chicken Chili over to Mr&Mrs Next Door Neighbor ...

Stop me if I mentioned this already.
They both gave everything a big thumbs up.
Mrs. NDN said that she'd never heard of a savory muffin before, but it went so well with the Chili.

Savoury muffins are quite usual in the UK - but not served with chilli. But why not? I'd definitely eat that.
