Pecan Sour Cream Coffee Cake

I've mentioned before that I like to give food as gifts.
I made this for my two nieces, that we'll be visiting with shortly.
I make this cake often, it's that good!!

A nice moist cake that's not too sweet, perfect anytime of day.
(I had to make another cake for DH :highfive:)
 
Here’s my first one:

Recipe - Mixed Seed Soda Bread

At first, I wasn’t sure about this one. I’m not much taken with soda bread, and considering this one added whole wheat flour and seeds, two other things I’m not agog over (well, I don’t mind seeds, I just don’t like seeded breads. I like my breads smooooov!), so I was prepared to make this, drop it here, and move on.

After two slices, though, I must say…it’s not as bad as I’d expected. Still doesn’t make me say, “Yum! Give me more dry bread with hard little bits in them! Yes, please!” - but I might say, “While this wouldn’t be my first choice, I wouldn’t say no to a little more.” That’s where the second slice came in.

I think if you like soda bread, if you like seeded loaves, you’d probably like this quite a bit.

Easy enough to throw together, so give it a go!



 
Here's my 2nd (and final) entry:

Recipe - Roasted Beets with Pistachios, Herbs, and Orange

We love beets. We really love beets. When I saw this recipe, I knew I'd want to make it for the challenge.

We eat a lot of jarred pickled beets, but what I like about this recipe (compared to those) is that with pickled beets, it's pickled all the way through. Every bite is pickley goodness, and that's fine. With these, however, you'll get that bit of vinegary bite from the dressing, but still retain that lovely earthiness of the unadulterated roasted beet. Best of both worlds!

It's a nut challenge, so I would be remiss if I didn't point out that the little crunch from the buttery pistachios matches wonderfully with the beets.



Great side dish, but we ate the whole thing as a meatless main.
